Making meatballs is an act of love. They are always a bit time-consuming to craft, and they require a tender patience to make them just right. I make them for Cody because he gets excited for meatballs. They are the perfect thing to have in the freezer for a babysitter to make. On nights we go out, I like leaving Cody with something he knows is still homemade just for him. So I make a double batch. Sometimes I put them in a chicken soup with pasta, chard, and a good shaving of Parmesan cheese that Cody does himself at the table.

We also love them over pasta with sauce (see my recipe at right for tomato sauce). In general, the longer you cook tomato sauce, the more the acidity mellows out and the sweeter it becomes. Here, the sauce cooks for only 20 minutes, but a caramelized red onion creates that sweetness.

Note: Orecchiette pasta is a small shell-shaped pasta that holds the sauce like a little bowl would and makes a perfect mouthful.
